Cucumbers are believed to have originated in India and have been cultivated for more than 3000 years. Especially popular in Mediterranean Cuisine, this cucumber may have origins in Persia because of its name; however, there is no evidence to support that theory. Cucumbers have an amazing capacity to retain water and to remain cool. Its interior may be up to twenty degrees cooler than its exterior. A fact that explains the old expression, “Cool as a Cucumber.”

Although our packaging is microwave capable, it is not the optimal way to prepare vegetables. We highly encourage you to try other cooking methods such as roasting, sautéing, steaming, and even boiling in some cases. You will find that the vegetables will have a better texture and flavor by utilizing some of these tried and true cooking methods, and will leave you with a better eating experience.

Cucumbers are very low in calories. A cup of sliced cucumber contains 14 calories and is a source of Vitamin C.

SELECTION

Table or slicing cucumber quality is primarily based on uniform shape, firmness and a dark green skin color. Additional quality indices are size, freedom from growth or handling defects, freedom from decay, and an absence of yellowing.

STORAGE

Ripe cucumbers should be long, thin and firm. They are best kept in their original container to protect their delicate dark green exterior and help retain their natural moisture. Their exterior color should be a deep vivid green and they should feel heavy for their size. Cucumbers can be stored in their original plastic at cool room temperature, or in the refrigerator crisper.

HANDLING & PREPARATION

Cucumbers, and especially Persian Cucumber’s are a great additive to Salad’s and Sandwiches. These cucumbers are considered to be “Gasless” Cucumbers, which are easier on the digestive system. Try slicing them fresh and cold on top of a salad, or a sandwich. Also great when sliced lengthwise, scope out the middle and fill with your favorite salad, such as Chicken Salad or Tuna Salad for a light, healthy meal.
