Mixed Vegetable Salad
2 pkg. Earth Exotics™ Mixed Vegetables
2 T. Earth Exotics™ Shallots (chopped)
1 clove Earth Exotics™ Garlic (chopped)
1 t. coarse-grained mustard 2 t. balsamic vinegar
1 T. lemon juice 1/2 c. olive oil
- Boil Mixed Vegetables for approximately 7-9 minutes, transfer to ice bath.
- In a blender mix Shallots, Garlic, mustard, lemon juice, vinegar, salt and pepper until mixture is smooth, with the motor running, slowly add olive oil, blend until emulsified.
- Toss vegetables in vinaigrette and serve.
