White Balsamic Asparagus
2 pkg. Earth Exotics™ Asparagus
2 t. orange marmalade
2 t. white balsamic vinegar
1 t. Dijon mustard
2 T. olive oil
pinch of white pepper
- Place the asparagus in boiling, salted water for 4-5 minutes until tender, but still slightly crisp, place in Ice water for about 30 seconds.
- Using a wire whisk or food processor, mix the marmalade, vinegar and Dijon mustard.
- Add in the oil bit by bit, while continuing to beat the mixture.
- Put the asparagus on a plate and pour the sauce over the center. Garnish with white pepper and serve warm or chilled.
